I know, I know... I've been MIA for far too long! *sigh* [By now I feel I don't even need to bother to apologize anymore.. Those of you who're still reading this blog (anybody even out there or is it just me, holding a conversation with myself? *lol*) probably know by now better not to count on regular blog postings by me! :p
Anyway... while I'm not officially participating in this year's vegan MoFo, I feel it's time for me to dust off my apron and start cooking & baking more again! [Life has finally calmed down a bit; the kiddos started school and everyone is getting into the groove again! -Oh yeah, and by now we've increased the number of our fur babies to 4! :D I'll share some pics later on!]

Time for Butternut squash soup!
It's MoFo Day #4 and it's time to post a super simple, but super yummy Butternut Squash soup recipe! =)
[You can easily sub the squash with any kind of pumpkin!]
~* Curried Butternut Squash soup *~
Ingredients:
*1 medium or large Butternut Squash
*1 large oninon
*3-4 med/big carrots
*1-2 Tbsp olive oil
*4-6 c veggie broth [I use one veg broth cube on 6 c]
*~1 Tbsp curry [the normal one, not the hot Madras!]
*salt & pepper to taste
*1 can of full fat coconut milk [I guess light would work too] or in a pinch plain plant milk such as soy, rice or almond.
Preparation:
Preheat oven to 350-400 degrees F (180-200 C).
Cut the squash lengthwise in half and then again so you have 4 long pieces.
Rub each piece with a bit of olive oil and sprinkle with kosher salt. Spike with a fork a few times.
Put on a baking tray, the fleshy part facing *up* and put it in the oven for good 45-55 minutes.
The squash is ready when it's nice and bubbly.
Let the squash cool down before you gently peel the skin off.
While the squash is in the oven, you can already prep the rest of the soup:
Dice the onion and sautee in the olive oil until translucent.
Add the broth and let it simmer on low heat.
Peel and dice the carrots and add to the onion/broth mix.
When the squash is done, cut it into ~1" cubes and it goes into the rest of the soup.
Personally I always use a pressure cooker for soups, so at this point I simply close the lid of my pressure cooker, turn the heat up and wait for the cooker to start steaming.
Once it does, I let it go for ~3-5 minutes, then I turn off the heat completely and let it sit. [I rarely use the quick release, though you could, of course.]
If you don't have or like to use a pressure cooker, just cook everything regularly in a 'normal' pot for a good ~30 minutes, until the carrots are tender.
Once the carrots are cooked and the soup cooled down a bit, use a stick blender (or if you prefer, pour it into a stand mixer -just make sure it's not too hot!) and blend until everything is creamy.
Now as the final step add the curry, salt & pepper and the coconut milk (you can also use regular plain plant milk if you don't have coconut milk. It just won't be as sweet and creamy)
Voila, it's ready.
You can add rice to it or while cooking some potatoes to make it more filling..
We like it just as it is with a slice of home made sourdough bread.

Happy Vegan MoFo! :)
Today is World Vegetarian Day as well as the beginning of the
Vegan Month of Food! =)

To start out, a few friends on Facebook have been asking for the recipe
of the Pumpkin Cupcakes with Cinnamon Icing of which I've posted a pic on FB as well as here if you've read yesterday's post. If not, here it is again ;-)
I can't take credit for the recipe, however!!! I've come across the recipe on another vegan blog and truly wish I'd have made a note in my printed copy from whom it is!.. [If anyone out there recognizes this recipe as their own, a big "Thank you!" from me!!!]
Pumpkin Cupcakes with Cinnamon Icing
makes 12 regular sizes cupcakes
1 1/4 c fresh cooked [or canned] pumpkin
1c sugar [I used 1/3 c and it's still plenty sweet]
1/4 c oil [I used coconut oil]
1/4 c soy milk [or any other plant milk, I love almond!]
1 tsp vanilla extract
1 1/4 c flour (white, unbleached)
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg*
1/4 tsp cloves*
[*I used 1 tsp pumpkin pie spice since I ran out of the above]
1/4 tsp salt
Preheat oven to 350 degrees F (or 180 degrees C), grease muffin tins.
In a large mixing bowl, whisk together pumpkin, sugar, oil, soy [or other] milk and vanilla.
In a medium bowl, sift together flour, baking powder, baking soda and spices.
Add dry ingredients to wet; mix until just moistened.
Pour into muffin tin [I use an ice cream scooper, makes the perfect portion per cupcake IMO] and bake for 20-22 min. or until a toothpick inserted into the center comes out clean.
In the meantime, stir together all icing ingredients until smooth.
Drizzle cupcakes with icing and refrigerate to set.
Icing:
1 c powdered sugar
1 tsp cinnamon
2 1/2 tbsp vegan margarine, melted [I use coconut oil]
1 tbsp soy [or other plant] milk
1/4 tsp vanilla extract.
Buon Appetito! =)
Edit: I made the 2nd batch today with 50/50 pumpkin/sweet potato since I didn't have enough pumpkin left (gotta love when the only store that carries canned pumpkin is out of it since months!..*sigh*) so I used a part of the baked yam/sweet potato and colored the frosting orange this time too.
It tasted just as good! ;-)
