After having come across this 'pasta' at our commissary on base, I just had to give it a try!
I love quinoa (my favorite method to cook it is in the rice cooker!

I had some awesome leftover tomato sauce from last night's dinner (with some roasted eggplant in it *yum* -recipe follows!) as well as some chickpeas, so my lunch was ready quick! ;)
