More pumpkin, please!

After having 'scored' 5 cans (those were the last ones and I admit, I had the slight panic we might never get any again for this year, so I had to be a 'hamster' and get them all! *lol*) of canned pumpkin yesterday at the shop on base, I had to do something with pumpkin, 
naturally! ;-)

And since I still had the big sweet tooth, cookies came to mind!
Being a big fan of Isa's work (I think, we all know whom I'm talking about! For those, who are not familiar with her, I mean Isa Chandra Moskowitz, author of many vegan amazing cookbooks) I had to try her recipe posted on PPK
for Pumpkin Oatmeal Cookies!


The result: They taste amazing!!!

And though it's not cooking related, this is how Mt. Etna looked like yesterday while I was baking the cookies and had a look out of our window. (Well, actually I have to get out of the house and step onto the sidewalk, but still..)
It looked cooler in real life.. the dark smoke colliding with the white clouds.

  5. Before having made the pumpkin cupcakes (posted in Sept) from VwaV, I also never used pumpkin in things like cookies! I never even liked things like pumpkin pie when I was a vegetarian! LOL
    Now I love it so much, I'm afraid we all might turn orange after a while! ^_^

  6. Also der Teig schmeckt schon mal sehr lecker und sie riechen... *yummie*
    Aus Ermanglung von Rosinen, habe ich klein geschnittene Datteln genommen, geröstete Mandelsplitter anstelle von Walnüssen. Zucker und Fett wie immer reduziert, sind mir die meisten Rezepte zu süß.
    Mal kucken was meine Kürbishasser dazu sagen werden, wenn das ungeliebte Gemüse so hübsch verpackt ist ;-)

    Ich reduziere auch oft Zucker & Fett, aber fuer's 1.Mal Probieren bleibe ich meistens 'close to the original' und weiche dann je nachdem ab. ;)
    Bin ja mal gespannt, was deine Kuerbishasser anschliessend gesagt haben! :)

  8. Habe nur je ein Viertel runter reduziert. Das fehlende Viertel Fett, durch Sojajoghurt ersetzt, Zucker lasse ich unersetzt. Datteln und Mandelsplitter passen gut dazu.
    Sie sind sehr lecker geworden, sagt auch K, hat kaum ausgekühlt, zwei verdrückt. Mein Mann ist da kritisch. O-Ton: Ganz gut, dafür dass Kürbis drin ist :-)

  9. Gut zu wissen! Sojajoghurt ist hier schwieriger zu kriegen (nur 'out in town' und das ist teilweise nervig mit der Fahrerei *lol*) aber ich werd's mir mal mit Mandelsplittern und Datteln merken.

    LOL ueber den O-Ton Deines Mannes! Das ist so wie meiner teilweise sagt "It has potential'! ;)
